Dumpling and Smashed Cucumber Bowl with Peanut Sauce
This is the recipe I'm making for dinner this week. It's by Hetty Lui McKinnon from NYT Cooking. Last week my friends made it for me, and I can't stop thinking about it. They beefed up the original "salad" version by serving it over rice.

INGREDIENTS
For the sauce
- 1/3 cup smooth peanut butter
- 1 garlic clove
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tsp sugar
- 2 tsp chile crisp
For the bowl
- 6 persian cucumbers
- 1 lb frozen potstickers
- white rice
- cilantro
- sesame seeds
PREPARATION
- make some rice
- mix up the sauce ingredients into sauce
- smash those cukes and salt 'em
- fry the potstickers
- toss the potstickers and cukes in sauce
- serve it over rice
- decorate with cilantro, sesame seeds, more chili crisp
